Fat homemade cottage cheese and gentle dough - an impeccable combination of taste shades in one dish, which since ancient is considered to be a traditional Slavic Kushan. But few people know that the roots of these delicious boiled pies reach the shores of Turkey, where they are called "Düs-Var". Dumplings with cottage cheese - how to cook the dough

The dough is the basis, from the elasticity and the softness of which the taste of future dumplings will depend. It can be kneading on ice water or cold milk, some even prefer to use kefir, so the taste of the test is always special.



Traditional dough

In the classic dough recipe, only cold water uses.

Required ingredients:

  • Chicken eggs - 2 pieces.
  • Wheat flour - 600 g
  • Water is 1 cup.
  • Sunflower oil - 2-3 tbsp. spoons.
  • Salt - 8-10 g (pinch).

How to knead:

  • Pour water into the deep container, and send oil, eggs and salt after it.
  • Add 50 g of flour, stir the dough, and then gradually plug the remnants of flour.
  • Check the dough, close it with a food film (you can with a towel) and leave for 40 minutes so that it goes. During this time, gluten will increase in volume and the dough will become an elastic structure.

Dough on milk

If you want to get a more gentle and fragrant dough, you should knead it on milk.

Required ingredients:

  • Milk - 200 ml.
  • Flour - 10-12 glasses.
  • Eggs - 2 pieces.
  • Water - 200 ml.
  • Salt - 10 g

How to knead:

  • In the sifted flour, make a deepening.
  • Wear eggs with salt and pour them into the hole.
  • Next, add milk with water.
  • Check the homogeneous non-sophisticated dough and leave for 30-40 minutes.

Traditional (sweet)

With sweet filler, dumplings are amazingly delicious and useful, while they can be supplied as a main dish or as dessert.

Required ingredients:

  • Cottage cheese - 300 g
  • Yolk - 2 pieces.
  • Sugar - 25
  • Vanilla sugar - 5 g

Cooking:

  • Give the cottage to the pasty structure with a blender or metal sieve.
  • Add sugar and yolk to the curd mass.
  • If the cheese is too dry, you can add 2-3 tbsp. Spoons sour cream.

With greens

Dumplings with cottage cheese necessarily should be with sugar. You can cook a dish and differently.

Required ingredients:

  • Cottage cheese (fat) - 250 g.
  • Eggs - 2 pieces.
  • Greens of parsley and dill - by ½ beam.
  • Salt to taste.

Cooking:

  • Wipe cottage cheese.
  • Green grind and add to cheese.
  • Eggs with salt and send to the cheese mass.
  • Stir all the ingredients.

Terms of thermal processing of dumplings with cottage cheese

After the dough approached, and the stuffing is ready, you can begin to prepare dumplings.
