Braga is a wort of water, sugar sand and yeast. In the process of fermentation, it is "transformed" into alcohol, which is produced by heat out. The fermentation process is one of the most important stages of moonshine. Since in Tara with Braga, a complex chemical reaction occurs, in which ordinary sugar under the influence of yeast turns into ethyl alcohol. If cooking technology or temperature will be broken, the final product cannot be called a good moonshine.
The temperature is optimal for the process, the temperature of 18-24 C is considered. If the temperature is too low, the process of fermentation will slow down, and the high temperature can destroy the yeast.

- Preparation of sugar syrup. Preparation of syrup is considered an optional process. But thanks to him, Braga wanders faster, and the moonshine is better tastefully. - Adding yeast. Yeasts dissolve in parts of cooked water. Wait until the first bubbles appear (5-10 minutes). Pour into the container.
- Freight process. Cover the container, leaving a small hole for carbon dioxide. Maintain a stable temperature throughout the entire fermentation period at 25-30C. On average, Braga plays about 5-15 days.

Recipe NO1: Classic
- Sugar sand - 1 kg.
- Water - 5 liters.
- Wet pressed yeast - 100 g
