Italian dish - risotto is known all over the world. Not everyone managed to cook it from the first time at home. The Italians tremendously relate to the choice of ingredients for their dishes. Risotto is no exception. It is prepared with mushrooms, seafood, figs, truffle, etc. So, how to cook classic risotto at home?
How to cook risotto at home - ingredients
Ingredients for 4 people:
- 1 liter of broth;
- 100 g of white dry wine;
- 320 g rice varieties Carnaroli / Arborio;
- 60 g grated parmesan cheese;
- 60 g of butter;
- 50 g onions;
- salt;
- pepper.
How to cook risotto at home - broth
Be sure to prepare the broth in advance. The Italians now do not complicate their lives and buy ready-made broths in the store or use bouillon cubes. In those families where traditions are followed, women are boiling with meat or vegetables: celery, carrots, onions.
How to cook risotto at home - preparation stages
- Clean the onions and cut it with cubes (not too small), as the onions must hold out and do not burn during rice roasting. In parallel, boil the pre-prepared broth. In no case in rice it is impossible to add cold broth so as not to interrupt the cooking process.
- Take a deep saucepan / frying pan, melt 15 g of butter and throw onions into it.
- Then add Carnaroli / Arborio rice and fry it with a bow for 2-3 minutes, constantly stirring with a wooden spatula.
- Add wine to rice and onions.
- Gradually start entering hot broth in rice. Constantly smoothly stir the ingredients with a wooden shovel so as not to disturb the structure of the grains.
- The boiling time of rice is indicated on the packaging. As soon as the rhizitto is ready, remove it from the fire and add the remaining 15 g of butter.
- At the very end, add salt and pepper to taste.
- Serve risotto hot and never leave on the second day (do not heal).
- In parallel with the risotto separately soda in a deep parmesan bowl. Italians sprinkle risotto before the start of the meal.

If you want to surprise your guests, then serve risotto beautifully. Optionally buy metal rings like cooks. Take a deep little bowl and lubricate it with olive oil. Failure tight. The procedure resembles a game in the sandbox. After the rice touches the plates, remove the bowl. Pour risotto with olive oil and sprinkle with parmesan.
Cooking risotto does not take much time and strength. The main thing is the selection of high-quality ingredients (wine, rice, olive oil, parmesan) and some patience.
