Modern business women almost never quashat cabbage on their own. They consider this business time consuming, do not want to communicate with brewing kegs and prefer to buy cabbage to buy grandmothers in the market or in the supermarket. But it turns out that it is very easy to break the original Russian vegetable and does not even need a wooden ride. Moreover, today there are excellent shredders for vegetables that will make it easier for the workpiece.

Cabbage, like grandmother:

  1. A couple of cabbage forks are torn on a special vegetable cutter.
  2. Two large carrots. Sattail on a coarse grater.
  3. Mix vegetables and add 4 pieces of fine laurel sheets.
  4. Optionally, put several black pepper peas.
  5. To each kilogram of the prepared cabbage, pumped by one and a half tablespoons of salt without top (it will be 30 grams).
  6. Cabbage overtake with salt until it stops juice.
  7. Fold it into a suitable saucepan and leave for fermentation in a cool place.
  8. Every day, pushing the cabbage with a wooden wand or a cutlets of a long wooden spoon to the bottom. It is necessary in order to make carbon dioxide from the cabbage.

Cabbage for salting by the recipe described above, take a very juicy and practically white. Cabbage juicy can be determined by cracked outdoor leaves near the bums. If the cabbage came across dry and green in color, then it can be broken with another way.

Cabbage sauna brine:

  1. One average cabbage flush.
  2. Mix it with grated carrots and spices (pepper and bay leaf).
  3. Tightly put cabbage into a three-liter jar.
  4. Swarge brine from one and a half liters of water, four dessert spoons of salt and two dessert sugar spoons.
  5. When the brine will cool, fill it with cabbage in the bank.
  6. Leave the jar on the kitchen table, substituting a deep bowl for it.
  7. Every day, pushing the cabbage with a wooden skewer. Juice that will flow into the bowl, pour back to the jar.

The brine cabbage will be ready after 3-4 days. So that it does not reoxit in the future, transfer the jar into a cool place (balcony or refrigerator).

If the cabbage in the future is supposed to put in the vinaigrette, the furnace with it cakes or cook cabping soup, then besides carrots, pepper and laurel sheet, you don't need to put anything else. But if the cabbage will be served on the table as an independent dish, you can put other vegetables in it, and even the fruits. This is a chopped red sweet pepper, slices of green apples, light raisins, rowan berries and even mushrooms, but in advance salted.
