Long rice (Basmati, Jasmine, Thai) itself is more dry, so that cooking water is needed less. It is enough to take one glass of rice and a half cup of water. Fill rice with water and bring it to a boil without covering the lid. Then reduce the fire to a minimum, cover the saucepan with a lid and cook for 20 minutes. Turn off the fire and do not open the lid for another 15 minutes. Crumbly long rice can be served as a side dish to any meat or fish dishes.

Round rice (arborio, vilen, carnaroli) is great for Italian risotto. Unlike the medium and long, such rice you need to cook, constantly stirring and gradually topping it hot broth. Risotto then turns out viscous and silky.

Should I wash rice before cooking? Even famous cooks disagree in opinions. It is definitely impossible to wash rice for risotto, so as not to wash the starch out of it, which gives the dish with a silky structure. Other rice varieties wash in the event that the price of rice is not very high - it is unknown, under what conditions it is fished, and all the foreign ingredients can be washed with water. If the rice is expensive, then all sanitary standards were observed in its production.

White rice boil on average 15-20 minutes, wild and brown - 35-40 minutes. Solite rice during cooking, if in the future it will not be prepared for other dishes. Then the salts take 1 teaspoon at 150 grams of rice. If the rice is boiled for puddings, soups, casserole, then you can do without salt - because it will be in a dish.
