How to prepare a custard at home?

Custard should be able to prepare every mistress. It is preparing quickly and easily, but used for the preparation of various kinds of cakes, cakes, cookies, eclairs, or as a separate dessert. In this article we will look at three recipes of a custard.

Classic recipe

Ingredients:

  • chicken eggs - 3 pcs.
  • sugar (white) - 260 g.
  • milk (the fatter, the better) - 530 ml.
  • flour - 90

Cooking method:

  1. In the deep container, we divide the eggs, pour 200 ml of milk and knock you well with a whisk. Overacted flour sup to the whipped mixture. At the same time stirring to avoid the formation of lumps.
  2. The remaining 330 ml of milk is poured into a saucepan, add sugar sand after which we rub well. We put it all on fire and bring to a boil. Do not forget to stir this liquid (wooden spatula), because sugar can stick to the bottom.
  3. As soon as the mixture begins to throw the fire and pour a lot of milk and eggs. Constantly stirring the contents of the pan, waiting for a re-boiling of the mixture.
  4. As soon as the mixture boils, turn off the gas and leave the mass to complete cooling. As soon as it happens, the cream automatically thickens, which indicates his readiness.

For cake "Napoleon"

Ingredients:

  • milk - 1 l
  • creamy oil - 200 g
  • eggs - 2 pcs.
  • flour - 4 tbsp.
  • sugar - 1 tbsp.
  • vanillin - 1 g

Cooking method:

  1. In a deep saucepan, we beat eggs with sugar and vanilla. In this mixture, in small portions add sifted flour.
  2. Continuing to beat the mixture, add milk to it. When the composition becomes homogeneous, we put on the slab on the middle fire. I bring to a boil, be sure to constantly stirring, otherwise the cream can burn.
  3. When bubbles appear, we remove the cream from the fire. We put it in a cool place until full cooling. In this case, stir every 20 minutes.
  4. Creamy oil, peeled on the little pieces, add to cream. We beat the weight of approximately 5-10 minutes, to a homogeneous thick consistency. If the cream did not thicken, put it in the refrigerator.

Recipe for biscuit cake (also suitable for tubes, cakes and eclairs)

Ingredients:

  • flour - 3 tbsp.
  • sugar - 150 g
  • yolks - 4 pcs.
  • milk - 300 ml
  • oil - 250 g

Cooking method:

  1. We carry cooled yolks along with sugar in a deep bowl. In this mixture, we introduce a sifted flour. Mix everything thoroughly.
  2. Chilled milk (200 ml) We introduce into the egg mass. At the same time, constantly stirred and bring the mixture until uniformity.
  3. Heat the remaining milk on medium heat in the sauinee. When it starts to throw, we introduce our milk-egg mass into it, and do not cease to stir. By bringing the cream to a boil, remove it from the fire and cool.
  4. Soften the creamy oil and beat it by a blender.
  5. Gradually we introduce cream to creamy oil. At the same time, we continue to beat a lot of blender.

Gentle custard ready. It can immediately be used to lubricate cakes. It is great for the preparation of cakes and tubes from puff pastry.
To lubricate biscuit cakes, we advise you to add less oil to the cream (100-200 g).
