How to cook Lagman in Uzbeks?

Lagman is a popular Central Asian dish. Moreover, each people prepares it in different ways. For example, in China, Lagman makes exclusively from the rice noodle. How to cook noodles for lagman?

In essence, Lagman is a combination of noodles, meat and liquid podium. For the real lagman, Uzbeks should not buy noodles in the store, it can spoil the dish. Noodles can be prepared independently. It's easy enough to do it.

Ingredients:

  • flour - 500 g;
  • egg - 2 pcs;
  • water 200 ml.;
  • vegetable oil - 3 tbsp.;
  • salt - 1 tsp;

Now you need to knead the dough for noodle:

  • 1 step - In a deep plate, beat eggs (quite a bit), add salt and water;
  • 2 step - gradually enter the sifted flour, constantly mix (the dough must be cool, if it sticks to the hands, then add some more flour);
  • 3 step - the resulting dough to press fists from all sides and give "go" 1 hour;
  • 4 step - roll dough into harness and divided into equal parts;
  • 5 step - all parts of the dough lubricate with vegetable oil;
  • 6 step - to spin each part in the shape of a snail;
  • 7 Step - Now every "snail" we begin to thinly roll out until the thicknesses are not more than 0.5 cm.
  • 8 Step - Thin threads screw in the hands, as if we wrap the brainsticks (for this you need a helper), the noodles must remind the subtleties of the braid cheese;
  • 9 Step - throw noodles into boiling salted water, cook for about 7-8 minutes until readiness.

Lagman in Uzbek (classic recipe)

If you want to surprise your close eastern dishes, Lagman will come to the rescue. It is not so difficult to cook it as it seems. Most of the time you need to spend on the preparation of all ingredients:

  • lamb - 700 g;
  • potatoes - 5 pcs.;
  • carrot - 3 pcs.;
  • bulgarian pepper - 3 pcs.;
  • radish black - 1 pc.;
  • garlic - 1 pc.;
  • eastern spices - to taste;
  • tomato - 2 pcs.;
  • tomato paste - 4 tbsp. l.;
  • vegetable oil - for frying;
  • greens - to taste;
  • meat broth - 1.5 glasses.

Now proceed to the preparation of the main dish

  • 1 step - lamb rinse under running water, crop fat and streaks, dry with a paper towel, cut into pieces;
  • 2 step - on cropped fat (if there was no fat on meat, use fat or vegetable oil) to fry lamb to a golden crust.
  • 3 Step - Carrot cut into small straws; Potatoes, radish clean and cut into cubes, send roasting to meat;
  • 4 step - chop tomatoes and add to the scenery (meat will start stewed in tomato juice);
  • 5 step - add chopped pepper and finely chopped garlic;
  • 6 step - add spices and broth (if there is no broth, it can be replaced with water);
  • 7 step - half an hour on weak fire;
  • The 8th step is to add a boiled noodles ready to be finished with meat.

Lagman must be served hot and decorated finely chopped greens.

The dishes are influenced by the taste quality of the dishes, especially noodles. Homemade noodles is a win-win option. Pay attention to the quality of meat. This Eastern dish is prepared only from lamb. Also do not save on spices. Oriental spices will give Lagman spicy taste.
