When you catch a huge salmon, do not rush to throw it away. A joke, of course. After all, even from the head of this fish it is quite possible to make a decent ear, which, in the presence of certain circumstances, can be remembered for a long time.
To implement our plan, you will need:
salmon head;
400 g of fish abdomen;
6 potatoes;
2 onion heads;
a pair of carrots;
2 pcs. bay leaf;
2 grains of fragrant pepper;
dill.

First of all, we remove gills from the head of the salmon. If this is not done, you can get a bitter broth. Then the fish product must be washed, put in a pan and pour clean water. After boiling it, add salt and all the pepper. After half an hour, the broth will be rich.

While in the pan there is a process, clean the potatoes and turn it into cubes. We cut the onion finely, and slices - carrots.

Now fry carrots and onions in a pan enriched with vegetable oil.

At the end of the time of cooking, we remove the fish from the broth and disassemble it on the bones and meat. Filter the liquid and put the potatoes into it. In a boiling soup, after ten minutes, unload the carrots and onions. Next - meat from the head.

Another 5 minutes - throw a bay leaf. Cooking goes to the readiness of potatoes. The last step turn off the stove and give our dish a thirty -minute rest. Pouring on plates of the ear is refreshed with chopped greens.
